  Abasolo is produced and distilled from 100% Mexican Cacahuazintle corn, which has been cultivated and passed down by local farmers for more than 200 generations for its distinct and exceptional taste. The deepest flavors of ancestral corn are revealed when using this 4,000-year-old boiling technique that has never been used in whiskey production but is essential to the preparation of corn as a food in Mexico. It is aged in new fired and used oak barrels in an open warehouse with a light roof and no walls, where temperature fluctuations and changing conditions ensure a unique aging profile before bottling Abasola.
