All the traditions and heritage of Mexico live in our agave plants (Agave means "wonderful" in Greek). Our Espadin agave varieties are harvested at 8 years of age when they reach optimal maturity, while the Tobalá variety is harvested at 12 years of age in wild natural conditions.
They are dying to give us their "spirit". Their hearts, or piñas, are slowly baked in pre-Hispanic underground ovens lined with volcanic stones for 3 to 4 days under a sheath of their leaves. Agave juice is traditionally obtained by grinding roasted pinas with a stone pulled by a mule called a Tahona, then fermented in oak vats and distilled twice in copper stills.
Our Maestro Mezcalero Arturo Martínez and his family have preserved this ancestral tradition and breathed life into one of our oldest drinks. We are happy to serve it to you.
Tasting notes
Appearance: Clear, crystalline, dense.
Smell: Aromas of ripe agave, pumpkin with a hint of smoke are elegantly balanced by citrus notes. It has a stringy character followed by notes of cinnamon and vanilla.
Taste: The taste is honest, with a spicy and earthy character that perfectly blends with the sweet notes of vanilla. The result of triple distillation is a great body and a noble finish with a distinct personality.
