Verveine du Velay Jaune de Pagès is sweeter than its older sister Verveine du Velay Verte, it is a combination of the scent of verbena leaves and many aromatic plants and herbs.
Verveine du Velay Jaune is sweetened with honey, can be enjoyed as a cocktail or neat on ice, and is also used in cooking or in baking recipes.
Verveine du Velay is a secret recipe like the production of Chartreuses des Pères Chartreux, it consists of verbena leaves and many other plants, herbs and spices that are used for maceration and distillation.
These plants are introduced into copper stills with brandy and alcohol. These stills with a water bath ensure gentle and slow heating.
This method captures the aroma and produces distillates that will serve as the basis for the production of VERVEINE VELAY.
The master distiller then proceeds to assemble all the ingredients: alcoholates, herbal infusions, verbena leaf infusions, Auvergne honey, sugar and cognac according to the recipes.
Each verbena from Velay is left to mature in cellars for several months, slowly improving in oak barrels and gaining softness and finesse.

Verveine du Velay was created over 160 years ago by Joseph Rumillet-Charretier, an enthusiastic herbalist, an experienced pharmacist and undoubtedly a chemist as well.
In 1886, his cousin Victor Pagès took over the family distillery, to which Rumillet gave his name.
The company was managed by a number of politicians from the Pagès family, as well as Raymond-Julien Pagès, a visionary in the world of rural tourism who founded the first “Logis de France”, which has now become a major chain of hotels and restaurants.
Verveine du Velay has long been part of the region's gastronomic and architectural heritage, with its elegant building (now listed) located in the Saint Jean district in the center of Puy-en-Velay.
