Inspired by Johnny Neill's travels to America, our pineapple gin is distilled with an emphasis on the tangy sweetness of Costa Rican pineapples, which add a wonderful fresh taste of tropical fruit.
Nose: Tropical fruit and spicy citrus with notes of freshly cut pineapple, lemon and earthiness.
Taste: Juniper and a little pepper result in a crescendo of tropical pineapple and delicate citrus.
Finish : Rich citrus notes linger along with tropical fruit and a hint of spice. Botanicals Juniper, Costa Rican Pineapple, Coriander Seed, Cassia Bark, Orris Root, Angelica Root and Sweet Orange.

French Martini
60ml Whitley Neill Pineapple Gin
25 ml of Chambord liqueur
50 ml of pineapple juice
Glass: Martini Garnish: Pineapple leaf attached to the glass
Directions: Add all ice cube ingredients to a cocktail shaker. Shake well for 20/30 seconds. Pour the contents into a chilled glass and garnish with a pineapple leaf.
Tropical Negroni
40ml Whitley Neill Pineapple Gin
30 ml of Bonanto liqueur
20 ml of Antica Formula vermouth
10 ml of Falernum Liqueur
Glasses: Rocks
Garnish: Dried pineapple
Procedure: Pour the entire contents into a mixing glass with large ice cubes. Mix for 30/40 seconds. Pour the contents into a glass with ice over a large ice cube and garnish with a slice of dried pineapple.
Bird Of Paradise Gimlet
50ml Whitley Neill Pineapple Gin
25 ml of grapefruit juice
20 ml of lime or grapefruit Cordial
20 ml of lychee juice
Glass: Coupe
Decoration: Peacock feather
Method: Add all ingredients over large ice cubes to a cocktail shaker. Shake well for 20/30 seconds. Pour into a chilled glass and garnish with a peacock or BOP feather.
